Mango Custard

Ingredients

  • Very ripe mangoes (peeled and chopped into chunks) :- 2 cups
  • Lime juice :- 1 tsp
  • Skim milk :- 1 cup
  • Coconut extract :- 1 tsp
  • Brown sugar (firmly packed) :- 3 tbsp
  • Cornstarch :- ¼ cupMango Custard

Instructions

  1. Mix coconut concentrate, mango chunks and lime squeeze till smooth.
  2. Put leftover ingredients in a saucepan.
  3. Combine till cornstarch is completely dissolved.
  4. Add the prepared mixture in mango mixture.
  5. Cook on medium heat and constantly stir, till mixture comes to a bubble.
  6. Continue to cook and stir for few minutes.
  7. Transfer this mixture into a bowl and let it cool.
  8. Put some mango chunks just before serving and serve chilled.

Quick notes

Add some mango chunks before serving and sprigs of fresh mint. Serve chilled and enjoy!
