Malai Kofta

Recipe: Malai Kofta

Summary: Malai Kofta is a classic North Indian dish originated from the Mughlai cuisine. Malai refers to the cream and koftas are deep fried paneer and vegetable dumplings in rich and creamy tomato gravy. It is a rich dish perfect for parties and special occasions. It goes well with chapati, naan, jeera rice, all pulaos and parathas.

      For Kofta

  • ½ cup aloo(potatoes)- boiled
  • 4tbspcornflour
  • ½ cup paneer- crumbled
  • 4-5 kaju (cashew nuts)- chopped
  • 1 tbsp raisins
  • 2-3 harimirch (green chillies)- chopped
  • ¼ tspshakkar (sugar)
  • 1 tspdhania(coriander) powder
  • 1 tspjeera (cumin)powder
  • 1 tsplalmirch(red chilli) powder
  • Oil for frying the koftakofte
    For the gravy
  • 3 tbsp oil
  • 2 medium pyaaz(onion)- chopped
  • 3 flakes lasun(garlic)-crushed
  • 1 inch adrak(ginger)-crushed
  • 2 tspkhuskhus (poppy seeds)- powdered
  • 3 large tamatar(tomatoes)-pureed
  • 1 tsplalmirch(red chili) powder
  • ½ tspgaram masala
  • ½ tspjeera(cumin) powdered
  • 1 tbspmungfali(ground peanuts)
  • 2 tbspmalai
  • 1 tspdhania(coriander)-chopped for garnishMalai Kofta


  1. Peel, mash and add salt to potatoes. Also add 2-3 tbsp of cornflour and mix
  2. Keep aside
  3. Mix all the ingredients for the kofta into a paste
  4. Make rounds of the dough and place a little of the prepared paneer mixture in the center of each potato round
  5. Seal the edges and shape into stuffed kofta. Deep fry each kofta till golden brown. Drain and keep aside
  6. Blend together onions, ginger, garlic and pooy seeds and fry in 3 tbsp of oil till brown and the oil begins to separate
  7. Add the pureed tomatoes and the masala powders
  8. Add the ground peanuts
  9. The gravy will begin to thicken
  10. You can also add some malai to thicken it some more
  11. Mix in some water if necessary
  12. When the gravy comes to boil, add the koftas
  13. Heat through and serve the malaikofta
  14. Do not over cook it.
  15. Remove and garnish it with chopped coriander
